Pasteurized vs Un Pasteurized milk - Organic, raw milk is a complete food, loaded with minerals, amino acids, protein and vitamins. Raw milk contains an amazing selection of minerals ranging from calcium and phosphorus to trace elements. This is true only if the animal is free range grass fed (toxin free). In the modern day societies milk comes from cows crammed in cages loaded with synthetic hormones and antibiotics in such cases milk is pasteurized to render milk to be free of harmful bacteria such as salmonella, E-coli etc.. But in any way the extreme temperatures kill all beneficial bacteria also and nutrition from the milk so ultimately rendering it not fit for consumption.
Homogenized vs Non Homogenized milk - is a process that breaks up and mixes the fat particles in milk, suspending them within the milk so that the cream no longer rises to the top as it does in unprocessed milk.
There is some debate as to whether the homogenization process is harmful as it alters the structure of the fat, breaking it into tiny particles that can more easily enter the bloodstream. Big dairy producers prefer homogenization as it allows them to create a uniform product from the milk from many different varieties of cows, makes it easier to filter that milk into the different fat percentages and leads to a longer overall shelf life.
